Recipe


Here is the recipe for those yummy pumpkin bars I posted a few days ago:

Pumpkin Dessert Squares

1 box yellow cake mix
8 T unsalted butter, melted
4 T unsalted butter, cut into small pieces and cold
3 eggs
1 jar Muirhead Pumpkin Pecan Butter (purchased at Williams-Sonoma)
2 T milk
1/4 cup sugar
1 t ground cinnamon

Preheat oven to 350 degrees. Lightly grease a 9x13 baking pan.

Reserve 1 cup cake mix in a small bow.

In a bowl, stir together the remaining cake mix, , 8T melted butter and 1 egg. Spred and pat into the prepared pan.

In another bowl, stir the jar of pumpkin butter, the remaining 2 eggs and the milk. Spread over the cake batter in the baking pan.

Add the reserved cake mix, flour, sugar and cinnamon in a small bowl and stir. Add 4 T of COLD butter. Using a pasty blender or fork, cut-in the butter to the cake mix mixture until pea-sized crumbs form and the mixture clumps together. Crumble over the mixture in the baking dish.

Bake until golden, about 40 minutes. Transfer to a wire rack rack to cool. Cut into squares and serve.
