Home Made Granola . . . mmmmmmm!

One of my sweet, sweet friends had a birthday yesterday . . . One of my gifts to her? This POST! Yes, Kelly, I finally got this recipe for you, HAPPY BIRTHDAY!

I hope that you all can enjoy it too.

This recipe is super easy and although not perfectly healthy, a better alternative than many other snacks out there all the while making your house warm with a comforting smell while baking it as well as a coziness that lingers well after your oven has cooled.

Here is what you will need:

3 cups rolled oats
1 1/2 cups nuts of choice (I used cashews and pecans in this batch)
1/2 cup extra-virgin olive oil
1/2 cup maple syrup or honey or a combination of both
1/2 cup packed light brown sugar
1/4 cup sesame seeds (optional)
1/4 cup flax seeds (optional, but I don't know why you'd want to leave them our the are SOOOO good for you!)
1 teaspoon salt
3/4 teaspoon nutmeg
1/2 - 1 cup dried fruit of choice (I used a cup of cranberries and cherries, combined, in this batch)

First: add all grains and nuts and seeds

Second: sprinkle the nutmeg on top and stir



Third: add the brown sugar, THEN the oil on top of it and THEN the syrup/honey after that. If you add the oil first you can then use the same measuring cup and the syrup/hone will slide right out because your measuring cup will still have some of the oil coating it. ; )

Fourth: stir it all up very well and spread it on a parchment lined baking sheet.
Back at 300 degrees for 40 minutes and stir every 50 minutes.
Finally: During the last 10 minutes of baking, add the dried fruit and stir well and bake for the remaining 10 minutes. When toasted remove from pan and let cool completely. You can then break it apart and enjoy! : )
Use as a healthy cereal, or as a tasty snack. I keep some in a Ziplock bag in the car incase anyone gets hungry while we are out.
